In deciphering which type of appetizer I should serve guests, or indulge in as a family, there are a couple of goals I have in mind other than ensuring it pairs well with the main course. The most important is its ease in consuming; is it bite-size or will it make a mess when guests eat it, making them less likely to dive in. I’ll never forget being at a friend’s home years ago and caprese salad was the appetizer offered. I politely asked for a utensil as I didn’t know how else to eat sliced tomato and mozzarella covered in olive oil and balsamic vinegar. The hostess insinuated that was too high maintenance and I should just pick it up with my hands, sans napkin or plate. Needless to say, I had one small piece, didn’t go back for more and felt self-conscious from the unpleasant comment.
These whipped feta phyllo cups are an appetizer that are bite-size, elegant, and packed with flavor, which will leave your guests reaching for more. I love these phyllo cups because they serve as a blank slate with endless options. With the whipped feta paired with phyllo, honey and nuts, it leans towards a Grecian palate in its reminiscent of baklava. The feta’s saltiness, perfectly complements the naturally sweet honey, a little heat from the red pepper flakes, and a beautiful crunch with the chopped hazelnuts.

Phyllo Cups can be purchased online.
- 8 oz feta cheese
- 4 oz ricotta cheese
- 4 oz Greek yogurt
- Zest of 1 lemon
- 1 Tbsp fresh rosemary
- 2 garlic cloves
Combine above ingredients in a food processor or mix by hand. Spoon filling into phyllo cups and top with a generous amount of honey, sprinkle with red pepper flakes and top with chopped hazelnuts. Leftover filling can be served with crackers.
